No Fuss Oven Roasted Brussels Sprouts

INGREDIENTS

  • 1 LB fresh Brussels Sprouts
  • 1 carrot (thin slices on the bias)
  • 1 Vidalia onion (cut into thick slices and separated)
  • 1 lime
  • salt and pepper
  • EVOO

STEP BY STEP

  1. Soak Brussels Sprouts in warm water for 10 minutes
  2. Meanwhile, preheat oven to 350º
  3. Prepare a steamer basket for a 4 minute steam
  4. Cut lime in half and set aside
  5. Trim end off Sprouts and cut in half
  6. Steam Sprouts and carrots together 4 minutes
  7. Let dry on a paper towel for another 4 minutes
  8. Toss very gently in 1 TBL EVOO and place on baking sheet
  9. Bake 10 minutes
  10. Turn Sprouts to the other side
  11. Squeeze on lime and add salt and pepper
  12. Bake another 5-7 minutes
  13. Broil until they edges begin to darken and the Sprouts become crispy
  14. Cool and serve
